So just because something has the word “skinny” in it,  it doesn’t mean that everything good is taken out of it. I mean, we still have the cheese! But we did lighten up all of the other ingredients including the addition of fat-free cream cheese and fat-free milk. All of the other Alfredo dip recipes I looked at used jarred Alfredo sauce and regular cream cheese. Since I love to snack, I try to usually sub ingredients for fat-free or reduced-fat options when I can. But don’t you worry, this “Skinny” Chicken Alfredo Dip is still full of flavor and taste just like the creamy, cheesy Alfredo you are used to.

Coming up with fun and inventive snack or appetizer ideas is hard, at least for me. I love having a variety of ideas when we have friends and family over. We have a tendency to always resort to chips and salsa. I love chips, but honestly, I always cringe because I know my kids will over-eat them. So I am always on the lookout for something new, something that I take a little more comfort with they eat more than I would like, so I won’t stress out as much. So when I came across GOOD THiNS snacks at Safeway, I was excited to try them. Here are just a few reasons why I love them as our new favorite snack option: baked not fried, no artificial flavors, no artificial colors, no cholesterol, no partially hydrogenated oils, and no high fructose corn syrup.

These snack bites are thin and crispy, our family favorite GOOD THiNS are made with chickpeas, you read that right, chickpeas! After our first time trying GOOD THiNS, I immediately went back to Safeway that same day and picked up all of the other flavors. I felt comfortable with my kids enjoying these snacks.

How do you make “Skinny” Chicken Alfredo Dip?

In a small bowl combine chicken and Italian seasoning toss to combine and set aside.

Preheat oven to broil, I did a high broil at 500 degrees.

In a medium skillet, over medium heat add fat-free cream cheese and butter. Begin to melt while constantly stirring, once butter has completely melted whisk in milk, grated parmesan cheese, Romano cheese, and ¾ cup shredded parmesan.

Stir until it starts to melt and come together. Whisk in granulated garlic. Continue to constantly whisk, once dip is completely melted add in chicken and stir to combine.

Spoon dip into serving pan, I used a 6×10 rectangular serving dish, but you could use anything. Just make sure dip is about 1 inch deep. Sprinkle with remaining ¼ cup Parmesan cheese and dried parsley. Place in the oven and broil until cheese starts to bubble and becomes a light golden brown.

Remove from oven and serve immediately with GOOD THiNS snacks, I used GOOD THiNS – Chickpea – Garlic & Herb which paired perfectly with the “Skinny” Chicken Alfredo Dip.

Ingredients
 

  • 8 ounce fat-free cream cheese
  • 1 cup fat-free milk
  • 1 cup shredded Parmesan divided
  • 1/2 cup grated Parmesan
  • 1/2 cup shredded Romano or Asiago cheese
  • 2 tablespoons butter
  • 1/2 - 1 teaspoon granulated garlic
  • 1/2 - 1 teaspoon Italian seasoning
  • 1 1/2 cups shredded chicken
  • dried parsley
  • GOOD THiNS - Chickpea - Garlic & Herb Crackers
