These delicious Best Ever Bran Muffins are a great source of fiber. They make for a perfect breakfast and can even be a healthy snack option.

While muffins are typically served at breakfast or brunch, these Best Ever Bran Muffins are one of my favorite afternoon snacks. I literally love these bran muffins and as a kid, I have the best memories of making these for camping.

While there may be those of you that think bran, ewe, I grew up thinking that anything bran was amazing. That was until I had someone else’s bran muffin and then I quickly realized that I was lucky to have my moms friend Shelia’s bran muffin recipe, because it can’t be neat.

I would never, ever try Bran Muffins growing up. They just sound so, ew. Am I right? But my mom’s friend Joan made the best ever bran muffins, so growing up my mom made these frequently. Once I moved away and onto college, of course having a bran muffin didn’t make your to-do-list. Then my junior year, I had a dorm-mate that made bran muffins in the microwave and we loved them. She kept the batter in the fridge and then we would just heat one up in a coffee mug, yum! But they were never quite the same as my mom’s muffins.

These Best Ever Bran Muffins are not dry at all. They have just the right amount of sweetness, that the kids love them but it isn’t going to make them a sugar zombie. I recently started making these again after watching my friend Ashley’s little one having some “digestive” issues. I decided to whip up a batch of these and see if she would eat them and if it would help. Well, she wasn’t the only one who loved them. My entire family loved them and I was so disappointed that I waited so long to make these.

These Bran Muffins make an incredible way to start the day, especially paired with a Greek yogurt or protein shake. My kids even packed them in their backpacks for a mid-morning snack, and then of course after school they were the first things they grabbed. I will say I am guilty of making the batter and licking the bowl clean. I never thought I would say that about a “fiber” muffin.

I loved making these in a regular muffin tin, but if you are wanting to have a little bite-sized snack, then I would make these in the mini-muffin tin and just adjust the time. Enjoy! XOXO San

How do you make Bran Muffins?

Preheat oven to 375 degrees.

Spray a regular sized muffin tin with cooking oil, set aside.

Add the 1 cup of Bran buds to the one cup of boiling water and stir to combine.

Add the remaining ingredients to a large mixing bowl, then add the soaked Bran Buds.

Mix until well combined.

Scoop batter into prepared muffin tin and bake for 15 minutes.

Let cool before removing from muffin tin. Enjoy!

Ingredients
 

  • 1 cup dry Bran buds {not flakes}
  • 1 cup boiling water
  • 8 tablespoon butter
  • 2 eggs
  • 2 cups sour milk {2 cups milk + 1/4 cup white vinegar}
  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 2 teaspoons salt
  • 2 1/2 teaspoons baking soda
  • 2 cups dry bran buds {not flakes}

Instructions
 

  • Preheat oven to 375 degrees.
  • Spray a regular-sized muffin tin with cooking oil, set aside.

  1. I make bran muffins every week. My husband and I have one every night. Your recipe looks great but mine is made with less sugar, fewer ingredients and All Bran cereal. Less ingredients and steps makes me a happy baker. I use the term baker loosely cause baker I am not.

  2. I find it odd that this recipe calls for sour milk. Do you really mean for the milk to go bad and then use it for this recipe?? We use unsweetened vanilla almond milk so it may take awhile for it to go bad. I love a box bran muffin mix but I would love to make my own even more, but again, I was just a little concerned by the “sour milk”.
