Kale Caesar Salad has all the elements of a classic Caesar salad but made with healthy crispy greens, roasted red pepper, & Easy Homemade Caesar dressing.

As I mentioned earlier this week, my son Aiden loves Caesar salads. So this entire week I have shared recipes that built up to this amazing Kale Caesar Salad.

Tuesday, I shared the Italian Herb Biscuits, which we used as croutons for this salad.

Then Wednesday I shared the Easy Caesar Dressing. Guess what, this is vegetarian too! When I gave this salad to my family I was shocked, no, floored, when my kids asked for seconds. One of them even asked for thirds!

This Easy Homemade Caesar Dressing is easy to make, ready in just 5 minutes and let me tell you, it tastes so much better than store bought Caesar dressing!
I am not the biggest kale fan when it is on its own and not sautéed. But this salad is perfectly balanced with the creamy Caesar dressing, roasted peppers, cheese and the croutons. Oh people, the croutons.

If you make this salad, you MUST take the time to make the Italian Herb Biscuits! It seriously makes this salad. And all the elements together are perfect! This salad is our new favorite salad, which says a lot. As my kids really hate anything green, as does my husband. This will be staying on our weekly menu all spring and summer. How do you make this Kale Caesar Salad?

To make this recipe easy, pick up a rotisserie chicken from your local super market and chop.

Coarsely chop both kinds of kale add into a large salad bowl. Gently tenderize the kale by squeezing with hands, 5-6 times. Add spinach to the kale, set aside.

Roast red peppers by placing on a baking sheet and top with a drizzle of olive oil over the pepper. Place in the oven on high broil and broil 3 minutes, stir the peppers and broil for another 3-5 minutes.

Remove from oven and set aside for a few minutes to cool.

Add the roasted peppers to the salad. I add them when they are still warm but not hot. Add in cheese, season with pepper.

Add 1/4 cups of Easy Caesar Dressing and mix together. Top with chicken and Italian Herb Biscuits.

Serve with additional dressing on the side so each person can have it to their taste.

Ingredients
 

  • 1 bunch kale
  • 1/2 bunch purple kale
  • 2 handfuls fresh spinach
  • 1 red pepper diced
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups cooked chicken diced or shredded
  • Easy Caesar Dressing
  • salt and pepper to taste
  • Italian Herb Biscuits we used these as croutons

Instructions
