Do you have one of “those” friends, where everything she makes tastes like it came straight out of a magazine? Or that when you try something from her, you think to yourself, “Did she make that or buy it?” I do. Her name is Jamie, and she is one of the sweetest people you will ever meet. You almost want to hate her at first because she has it all together. A garden, fresh bread, everything is homemade, and to top it off, she has 5 fabulous, well-mannered little girls.

She is wonderful, and I am happy to say that she has given me 3 recipes I love and use routinely in our menu. I got this bread recipe when she had one of my daughters over for a play-date. It was around St. Patty’s day, so they made bread and dyed it green. Jersey brought some home, and I loved it. I immediately emailed her for the recipe. What I love about Jamie’s recipes is they are straight forward and fail-proof. So I am passing it on today – an easy whole-wheat bread recipe your family will just love.

How do you make Whole Wheat Rolls?

Bread Machine – My favorite way
  • Mix warm water, yeast, and a pinch of sugar in a small bowl. Let it sit for 5 minutes until bubbles form. Pour into the bread machine and add oil, salt, brown sugar, and honey. Top with flour and wheat gluten and stir. 
  • Start bread machine on dough setting. I check after 10 minutes to make sure it is mixing. If not, I take a butter knife and give it a few good stirs to help incorporate the water and flour. I almost always do this.

  • Remove from bread machine and make the dough into 2 loaves or form into balls for rolls. I like to make 16 larger bread rolls. Or two loaves of bread, you can use loaf pans or not. I use loaf pans as my kids are used to that shape. Let it rise until doubled.
  • Preheat oven to 375 degrees. Bake for 45 minutes for loaves or 15-20 minutes for rolls.
By Hand
  • Mix all ingredients until it pulls away from the sides of the bowl. Knead on the counter until it’s smooth and elastic, but a little sticky. Let it rise covered in a warm place until doubled, 1-2 hours.

  • Shape into 2 loaves or 16 large rolls and let rise again until doubled.

  • Preheat oven to 375 degrees. Bake for 45 minutes for loaves or 15-20 minutes for rolls.

Ingredients
 

  • 2 1/2 cups warm water
  • 1 tablespoon yeast
  • 1/2 cup brown sugar or honey
  • 4 tablespoon olive oil
  • 1 1/2 teaspoons salt
  • 2 tablespoon vital wheat gluten optional- it is the secret ingredient in soft wheat bread, it still works without it though!
  • 6 cups flour I do 4 cups whole wheat flour and 2 cups of white flour

Kids Review: All of my kids love this bread! They love it warm with butter, jam, or honey. One of our little friends, Isaac, thinks this bread is the best bread he has ever had. And if I don’t have it for his lunch, he asks for my homemade pizza. This kid cracks me up! I personally like the bread just straight out of the oven with nothing on it. When I make the bread, I personally love using honey over the brown sugar, but sometimes I feel it’s a little too sweet, so I usually make it with brown sugar.

  7. Oh I definitely have someone like Jamie. She’s my mother and can bake bread from scratch without a recipe. Her bread and cakes come out tasting amazing and I only wish I had half her talent. I’m no good at baking and don’t even try. The roll looks super yummy though!

  8. Awe, that is sweet of you. (All except the part where you almost want to hate me.) This really is the best bread recipe I know of. It has such a great texture and mmmmm…. it tastes heavenly. I tend to make the loaves more often than the rolls, but that’s probably just because it’s less time consuming to pop it into a pan than to form individual rolls. Made some today that was gobbled up quickly. Oh, and this also freezes well. I try to always make a double batch and then I have sandwich bread ready to thaw when we run low.
