To make it clear, literally all of you Monster Cookie lovers out there will agree that this is better than even the original. I can’t believe I am saying this, but it’s true. It has all of my favorite ingredients, and not many more than that- honey, peanut butter, oats, and M&M’s. Drooling!

My sister Tami and I are completely and utterly obsessed with this Gluten-Free Peanut Butter Cookie. It is so soft and chewy and the peanut butter is the star, there is nothing extra to distract from the amazing peanut butter flavor. It is the same with this cookie, the main ingredients shine.

Monster Cookies are literally our family to-go-to cookie for almost anything, camping, after school snacks, pool trips, vacations, or sometimes I even make them for those “harder” time of months. You will catch me eating the dough right from the mixing bowl. What is great about this recipe, it literally takes like 5 minutes to whip up! I have two dozen of these cookies done in less than 30 minutes, including baking time. That’s amazing.

You will not want to miss out on these cookies, and here is an added perk. While I am HUGE butter fan, this recipe saves on those extra calories as I eliminated white sugar and butter from the original recipe. Come on you need to try these, get them on that “to do” list.

How do you make Simplified Monster Cookies?

  • Preheat oven to 350 degrees.

  • In a medium mixing bowl, stir together peanut butter, brown sugar, oatmeal, eggs (beaten), honey, baking powder, and vanilla until well blended. It will look creamy, smooth and glossy. You should not be able to see any egg throughout the batter.

  • Using a cookie dough scoop, scoop the dough and place it on a cookie. Bake 10-12 minutes. At 10 minutes I take out the pan and drop it on the counter to help cookies flatten a bit, then stick back in the oven for another 2 minutes. 

  • Allow the cookies to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.

Ingredients
 

  • 1 cup peanut butter I used Adams All Natural Peanut Butter
  • 1 cup brown sugar
  • 1 cup instant oats
  • 2 eggs beaten
  • 1 teaspoon honey
  • 1 1/4 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 cup M&M candies

Instructions

    This is my favorite cookie recipe. I substitute dark chocolate chips for the M&Ms and reduce the brown sugar to 3/4c. So good!
