My daughter, Jersey, and son, Aiden, are yogurt fanatics! Not only that, they are both pretty particular on the brands and flavors of yogurts they will eat. While Aiden will venture out and try some different flavors, it comes along with a little complaint. Jersey is pretty clear on what she will and won’t eat. Yoplait’s Strawberry Banana is her absolute favorite and Strawberry is a close second.

What’s great about finding a yogurt that your kids love is that it makes a great breakfast and/or snack. It’s also fantastic for on-the-go or a sit-down breakfast far, which is a great brunch idea for get-togethers or sprucing breakfast up a bit. And talk about a fabulous source of calcium {Yoplait, has 20% of the daily recommended calcium, in one serving}. Having wholesome snacks and breakfasts that are easily accessible, allows them to make decisions that are better for their overall health. Having a family of 7, we have to stock up on yogurt weekly. Buying the 8 count packages at Walmart make this easy.

We love making granola to accompany our yogurt, even though Jersey prefers it just as it is. Aiden and I love mixing it up a bit. This Piña Colada Granola is the perfect spring and summer granola.

How do you make Piña Colada Granola?

  • Preheat oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl add oats, chia seeds, coconut, macadamia nuts, flaxseed, and salt; toss to combine.
  • In a small mixing bowl or measuring cup whisk together coconut oil, coconut extract and agave nectar.
  • Pour coconut oil mixture over the oat mixture and stir to coat evenly.
  • Spread oats evenly on the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, about 30 minutes. Stir oats on pan about 1/2 way through to evenly bake. If the oats are baking quickly, then you can remove from the oven earlier, you don’t want burnt oats.
  • Remove granola from the oven once done cooking, add dried pineapple bits on top of oats and toss to combine. Let the granola cool completely. Store in an air-tight container.

Ingredients
 

  • 4 cups rolled oats
  • 3 tablespoons chia seeds
  • 1/2 cup flaxseeds
  • 1 1/2 cups unsweetened coconut
  • 1 cup macadamia nuts
  • 1/2 teaspoon salt
  • 1-2 teaspoons coconut extract
  • 3/4 cups coconut oil
  • 1/3 cup agave nectar

Instructions

  3. What kind of coconut oil unrefined or??? I never know when it calls for coconut oil. I want to try this sounds yummy
