These No Bake Almond Granola Bites are the perfect snack to refuel anytime of the day. Made with almond butter, flaxseed and honey, they are creamy while still having a touch of sweetness from the chocolate covered berries and a bit of crunchiness from the slivered almonds. They’re a perfect snack in a bite.
I am all about snacks. Being a busy mom of 5 and working from home, I rely on my snacks to get me through the day without the shakes or mood swings. But with that said, I also have a sweet tooth. I can load up on sugar and be happy and content… well, at least for the 5 minutes the sugar makes me feel good. But later, I get tired, so I love making snacks with a more a little more substance, adding in extra nutrients to help keep me going without that crash soon after. But come on, in order for me to be happy, I need just a touch chocolate in there, and then I can be content, very content.
That is why these No Bake Almond Granola Bites are perfect!
The touch of sweetness comes from the DOVE ® Fruit. I love these as is, but they are perfect in these No Bake Almond Granola Bites. In this recipe, I used the blueberries, but you could really use any of their flavors. My kids love the cherries the most, where I love the blueberry. DOVE ® Fruit are so easy to find at Walmart, located with all the other dried fruit in the snack area, but they are also conveniently located at the front of the store in their own display near checkout. Trust me – they deserve the attention. They are that good. DOVE ® Fruit includes cherries, blueberries, and cranberries. All are real fruit dipped in DOVE® Dark Chocolate: a perfect combination.
Need a snack that won’t leave you tired in 5 minutes and gives you that boost to get your through the day? Try these No Bake Almond Granola Bites. Trust me, they’re amazing.
- 2 cups quick oats
- 1 cup crispy rice cereal
- 1 cup + 2 tablespoons creamy natural almond butter
- 1 cup ground flaxseed
- 1 cup DOVE ® Fruit Blueberries
- 2/3 cup sliced almonds
- 2/3 cup + 2 tablespoons honey
- 2 teaspoons pure vanilla extract
- 3 tablespoons coconut oil
Line a cooking sheet with parchment paper and set aside.
In a medium mixing bowl add in quick oats.
Add in crispy rice cereal onto of the oats, then top with flax seed.
Next add in the almond butter, coconut oil and
Add in DOVE ® Fruit Blueberries, gently stir together, not to crush the rice cereal too much.
Then stir in the honey. Sliced almonds and vanilla extract until the mixture starts to come together.
Make small tablespoon sized balls in your hand or use a cookie dough scooper, to make the bite and then using your hands roll in between the palms of your hand to get a perfectly round bite. I use the scooper SO MUCH easier!
Set on the prepared cooking sheet and repeat with remaining granola.
Set bites in the refrigerator for 1-2 hours.
Once chilled serve or place in an airtight container or freezer bag that you can zip shut to store in the refrigerator or freezer.
Can store in the refrigerator up to a week, in the freezer up to a month.
