My kids seriously love quiche and will eat it for any meal. I only recently discovered this after moving next door to the “Quiche Queen” Jill. She makes quiche all the time for dinner, and since my Jersey eats dinner there at least once a week, I have heard rave reviews. Jill, a working, single mom, told me how easy it was for her to make quiche for dinner and that she loves the simplicity of it. Her kids love it, too and obviously, Jersey does as well.

What to serve with quiche?

I love making this with a few healthy sides for a complete meal.

Once I figured out how much my kids love quiche, I took Jill’s lead and started making quiche for dinner. The best part about this, is I make three at a time, so the leftovers make a great breakfast or lunch, and the kids love it.

Once I started making it for dinner and found it easy, it quickly became a weekly thing. Now, because we have a large family, I always make 2-3. Because of the leftovers, as I mentioned, and two, it isn’t that much harder. I have two meals ready in less than an hour with a prep time total of 20 minutes.

We are now on a quiche streak, and we have more of our favorite recipes coming up. But since sausage was the first one we made, well, it’s the first to be shared. If you want to make the crust from scratch (totally recommend), try My Favorite All-Butter Pie Crust (from Crazy For Crust).

So cheers to great new neighbors who share their to-go-to meals, and their home and make friends that will last a lifetime. So enjoy this Easy Sausage Quiche from our oven to yours. XOXO San

How do you make Easy Sausage Quiche?

  • Preheat oven to 400 degrees F (200 degrees C).
  • Roll out pie crust into pie pan.
  • Top pie crust with sausage, cheese, and onion. Mix the sausage, cheese, and onion in a medium mixing bowl and then throw into the pie crust. I prefer to layer it – one less dish to wash.

  • Mix the eggs and half and half in a bowl with seasonings, and pour the egg mixture over the toppings in the pie crust.

  • Bake in preheated oven for 15 minutes. Then reduce heat, leaving the pie in the oven to 350 degrees F (175 degrees C), and bake for 35 minutes.
  • When it is done, the top of the quiche will begin to turn a nice golden brown.
  • Remove from oven and allow to sit 5-10 minutes before serving. Enjoy!

How do you store quiche?

  • Once baked, a quiche should be refrigerated.
  • Leave the cooked quiche in its baking pan and wrap tightly in plastic wrap or aluminum foil.
  • Eat within 3-4 days of making.
  • You can also freeze quiche in an airtight freezer bag. This will extend the life up to 1-2 months.

      1. I’m sorry this happened! We’ve never had an issue with it spilling over while using a 9.5″ pie pan. What size did you use?

          1. Hi Julie, we haven’t made this with a milk alternative before but it should work just fine with whichever unsweetened kind you generally use in recipes.

  1. Hello. The recipe ingredients include adding some dry mustard but there is no directions saying where/how to add it to the quiche! Can you please specify? Thanks 🙂

    1. It should be added into the egg mixture before pouring into the crust. Thanks for pointing that out!

  2. This makes me miss my great neighbors that used to share dishes with us (and us with them). Lucky you to have a lovely neighbor that is the quiche queen! Yours looks fantastic!!

        1. You can totally prepare the filling and crust the day before, but wait to pour the filling into the crust until just before baking it as it may get soggy.

This was a great receipe, my grandson has been asking me to make one. I found this one and made it Christmas day, my family loved it. I didn’t gave dry mustard and also added peppers and Swiss cheese. Delicious.

Sausage and spinach quiche was delicious. I used 4 eggs, a pinch of nutmeg and sharp cheddar & mozzarella cheese. Smoked cheese sounds good, will try that next time!

    1. Spinach sounds like a tasty healthy addition for sure! We also like to mix it up, sometimes we use bacon or other types of cheese. Smoked cheese would definitely add a richer taste! Thank you for the review!

    1. Hi Vince! The sausage should be fully cooked before adding to the quiche. I hope you enjoy it!

    1. Sorry for the confusion! It should be 15 + 35, so 50 total. I have fixed the recipe card. Thank you for letting us know!

I have made this quiche so many times and it comes out perfect and delicious every time! I make it exactly as the recipe reads. It’s fantastic!

  5. Schwans used to have a quiche recipe that had everything in the sausage recipe but also had hashbrowns in it too. Anybody have that recipe?

    1. Hi Jaime, we’ve added potatoes to this recipe with no issue. Just cook 2 cups of hashbrowns according to the package, then add to the pie crust and top with the other ingredients. The bake time should not be affected as the potatoes are already cooked. I hope this helps!

  6. My kids LOVE this, but don’t eat the crust. Do you know if the baking time should be modified in any way if I make this without a crust?

    1. Hi Jewel, you can cut out the first 15 minutes of baking and just cook for 30-35 minutes at 350° or until the eggs are set.

This is the second time I’ve made this recipe for my husband (he’s a finicky eater), and both times it was a Big hit!! Thank you for sharing this recipe! I look forward to adding it to the regular rotation.

    1. I have never tried that, but I do not see why not, just make sure to seal properly to avoid freezer burn.

This recipe was really good. Oven time was perfect. Mine was very sausage heavy. I ended up using 6 eggs. Next time I’ll definitely put less sausage. I added peppers and mushrooms sautéed with the onions. Great recipe!

  9. My husband loved this. I used hot breakfast sausage. And the second time I made it, I cooked the onion with the sausage. My husband liked it better that way. Will definitely keep it in y rotation.

  10. A delicious and hassle-free recipe that combines the savory goodness of sausage with the rich and creamy texture of quiche. Quick to prepare, this dish is perfect for busy mornings or as a savory option for brunch. Enjoy the simplicity without compromising on flavor – a delightful treat for any mealtime

I used Italian sausage, leeks, fresh garlic and spinach, upped the half and half by half a cup (lol) and used an extra egg since I had extra filling, added a splash of Sriracha and a tsp of Dijon along with some salt and pepper, extra sharp aged cheddar with a large pinch of shredded Parmesan, just over a cup for each pie, and two pre-made frozen small deep dish pie shells. Smells like heaven up in here. Easy and quick to put together. Can’t wait to taste it. Thanks for sharing your recipe .
