I love creating easy, fun and simple desserts – for birthday parties, fun get-togethers and also for teachable moments.

My husband was an English teacher for many years before becoming an assistant principal, so education is really a focus in our home. Even in the summer months, when the kids have daily reading, math and English work. And because all our family members are foodies, we of course have to make some of our lessons around food. This usually means math, but occasionally we take it into science too.

My father-in-law worked in the space industry for over 30 years working in the public relations and communications department at Lockheed Martin. Because of this, our family has a huge love for space anything, including multiple trips to Kennedy Space Center, drawings, paintings and conversations about space. My kids are super pumped to someday attend Space Camp in Alabama because that is hands down my husband’s all-time favorite childhood memory. Recently, my in-laws were coming up for a week, and of course, we had to make a spaced-related dessert. So we quickly whipped up a batch of these Easy Rocket Cupcakes.

I am in love with the new Pillsbury Filled Pastry Bags! It’s so nice to have yummy, ready-made frosting in a bag, that I don’t have to make a mess over. It was so easy to use so my girls frost all the cupcakes.  We went with the girls favorite cake mix, Funfetti®.  {Confession time, I love anything Funfetti®.} The new frosting bags make it easy for any level of baker to make their baking treat look like a masterpiece.

Easy Rocket Cupcakes are a fun way to blast off any celebration! These candy rockets are made easy using the Pillsbury™ Funfetti Baking Mix ® baking mix and new Pillsbury Filled Pastry Bags. Don't delay your countdown to a deliciously sweet treat and have the kids help you make these Easy Rocket Cupcakes.

Ingredients
 

  • 60 Lifesaver candies
  • 2 white Airhead candies
  • 2 red Airhead candies
  • 2 blue Airhead candies
  • 2 green Airhead candies
  • 1 orange Airhead candy
  • 12 paper straws any color will work
  • 1 box Pillsbury Funfetti® Cake Mix
  • 1 Pillsbury Pastry Filled Bags with Vanilla Frosting

Instructions
 

  • Make and bake cupcakes according the package directions.
  • Allow the cupcakes to completely cool on a baking rack. Meanwhile, you can make the candy rockets.
  • Make rockets by placing 5 Lifesaver candies (I prefer white, but any flavor will work) on a paper straw.
  • Cut a small sliver of the red taffy, (any color will work) and wrap it around the straw where the bottom of your "rocket" - the bottom end of your hard candies, keeping a little of the straw poking out the top. This will help keep them in place.
  • Set aside.
  • Make the tip of your rocket by cutting one of the Airheads in half; I used blue and green for the tip of the rockets.
  • Then cut one of the halves at an angle - look at the image for an idea of how to do this. Then, roll the taffy so that it makes a cone.
  • Cone shape assembly.
  • Make the flames for the rocket by cutting a red piece of Airhead in half, and then cutting a V shape into the bottom of one of the halves. See images below.
  • Then, using an orange Airhead, cut two little slivers and place them down the each side of the V cut into the red Airhead like pictured below.
  • Shape the flames to how you want them to look.
  • Next, cut the wings out of any color of taffy; I used white. Cut a left and a right triangle, like the image below and stick them on the side of the rocket. Then, assemble your rocket by adding the flames and rocket top. It is easy to push the taffy together, forming each piece as you desire.
  • This is how it should look when it all comes together.
  • Once cupcakes have completely cooled, frost them using the Pillsbury Filled Pastry Bag. We chose vanilla frosting.
  • You can do this however you would like. Jojo liked using more of star technique whereas Jersey wanted more of a swirl look.
  • After you have added the frosting, stick the bottom end of the straw all the way into the cupcake with the rocket coming out of the cupcake.
  • It’s fun that each kid can make their own rocket, frost their own cupcake and of course, devour it when it is time. Blast off and enjoy!
