My mom’s best friend, Shelia left us with the most amazing coffee cake recipe, and we use it over and over. Since her passing, I have made several spin-offs of it. I know she is just smiling down on us too, loving all the baking I am doing and using her delicious recipes. I know too her family loves how much we remember her through our baking.

Holidays are perfect for sharing yummy treats like this Cinnamon Chip Coffee Cake. Every year my family and I go out on Christmas Eve and carol to our close family and friends, or at least the ones that are home. We leave them with a treat, of course! I try to do something not typical because everyone has already been filled up on sugar cookies and candy, so this year, this is the treat! Not only is it easy, it is pretty inexpensive to make.

How do you make Cinnamon Chip Coffee Cake?

  • Preheat oven to 350 and grease 9×13 metal pan.

  • Mix all the ingredients for the cake, except the cinnamon chips, in a mixer for 7 minutes. I love to use my Kitchen Aid mixer for this!

  • Meanwhile, mix together brown sugar and cinnamon in a small bowl.
  • Stir in the cinnamon chips and pour batter in the greased 9×13 metal pan. Sprinkle brown sugar mix over the cake and top with 1/2 cup cinnamon chips.

  • Place in oven and bake 25-35 minutes or until the cake is set and is pulling away from the edges. Let it completely cool so it doesn’t crumble when you cut it.

  • Serve and enjoy!

Coffee Cake

  • 1 yellow cake mix just use the mix, don’t follow the directions on the back!
  • 4 eggs
  • 3/4 cup canola or vegetable oil
  • 3/4 water
  • 1/2 cup instant vanilla pudding
  • 1 teaspoon vanilla
  • 1 cup mini-cinnamon chips I buy Hershey’s

Topping

  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/2 cup mini-cinnamon chips
