How do you make Chipotle Fries?
Finely mince cilantro and garlic. Place cilantro, garlic and zest and juice from one lime in a bowl and toss together, set aside.
Heat oven to 450 degrees.
In a large skillet over medium heat, heat olive oil. Add onions and garlic and let cook for 3-4 minutes until onions and garlic begin to soften. Next, add in the chipotle sauce and stir to combine.
Once hot, turn off heat and add fries. Toss to coat.
Add coated fries to a large baking sheet, making sure to lay in a single layer. Bake at 450 for 30 minutes, turning fries halfway through cooking time.
Add ½ of the gremolata to the top of the fries & 2 cups of Monterrey Jack cheese. Place back in oven for 3-5 minutes or until cheese has melted. Remove from oven top with the remaining gremolata & sprinkle additional chipotle sauce if desired. Or serve some additional chipotle sauce on the side as a dipping sauce for those who want some additional heat.
Serve immediately & devour.

- 2 cups Monterrey Jack cheese optional
Cilantro Gremolata
- 1 cup cilantro leaves minced
- 1 clove garlic
- 1 lime zested and juiced

For some extra flavor for the pretzels, you can always use beer. The flavor just brings more to the table. Use it instead of water when your starting the yeast process.
