As a mother, I love it when my kids gobble up what I cook for them. And sometimes it’s tricky. If it were up to them, they would literally eat basics like cereal, pizza, nachos or fries every night. Only one of my little ones is an exception. Cannon, my five-year-old, loves his fruits and veggies.
So let me let you in on a little secret. I fancy up one of their favorite dishes with a few fresh and simple ingredients. Then voila, mission accomplished. Alexia Smart Classics Roasted Straight Cut Fries give me a versatile and tasty premium starch that is good to begin with, but served to inspire these Chipotle Fries. And here is why I especially love these fries. Alexia Smart Classics fries are all 98% fat-free and 100 calories per serving, and they are available nationwide in 3 varieties: straight-cut fries, crinkle-cut fries and tri-cut potatoes. My kids just love the look of the classic fry, so that’s why I used them in this recipe, but you could easily sub in the crinkle-cut or tri-cut. Then add some of your family’s favorite fresh ingredients, like lime and cilantro, and then let them devour the entire pan without a fret. - Cilantro Gremolata
- 1 cup cilantro leaves
- 1 clove garlic
- Zest & juice from one lime
- 1 bag Alexia Smart Classics Roasted Straight Cut Fries
- ½ cup diced red onion
- 1 diced garlic clove
- 1 teaspoon olive oil
- ½ cup chipotle sauce
- Salt to taste
- *Optional*2 cups Monterrey Jack cheese
Finely mince cilantro and garlic. NOTE make sure that you have 1 cup of minced cilantro. Place cilantro, garlic and zest and juice from one lime in a bowl and toss together, set aside.
Heat oven to 450 degrees.
In a large skillet over medium heat, heat olive oil. Add onions and garlic and let cook for 3-4 minutes until onions and garlic begin to soften. Next, add in the chipotle sauce and stir to combine. Once hot, turn off heat and add fries. Toss to coat.
Add coated fries to a large baking sheet, making sure to lay in a single layer. Bake at 450 for 30 minutes, turning fries half way through cooking time.
Add ½ of the gremolata to the top of the fries & 2 cups of Monterrey Jack cheese. Place back in oven for 3-5 minutes or until cheese has melted. Remove from oven top with the remaining gremolata & sprinkle additional chipotle sauce if desired. Or serve some additional chipotle sauce on the side as a dipping sauce for those who want some additional heat. Serve immediately & devour.
