Friends today is a very special post. This recipe of Peach Cobbler Cake came from my dear friend Allison who blogs over at Cupcake Diaries (cute name, right?!!). She recently published an awesome summer hit of a cookbook called Sun and Sizzle: Grills to Green and Everything In Between. Peach Cobbler Cake is where cake and cobbler collide into one pan. This is a deliciously easy to make dessert that will become an instant family favorite.

This will become an instant summer favorite. Besides the recipes being mouthwatering delicious, they are simple and easy. This Peach Cobbler is just one of my favorites. I will say that if I had to choose a top 5 from the book here is what they would be: Mixed Berry Wedge Salad, Grilled Lemon Garlic Shrimp Skewers, Peach Cobbler Cake and Creamy Corn Dip. How do you make Peach Cobbler Cake?

Preheat the oven to 350 degrees. Have a 9×13 metal pan ready, if you are using a glass 9×13 pan make sure to spray with cooking oil first, set aside.

In a medium mixing bowl add peaches, milk, eggs, sugar, cinnamon, and nutmeg. Stir together until well combined and pour into prepared 9×13 pan. Sprinkle white cake mix (dry) evenly over the batter. Drizzle melted butter over the cake mix.

Place in preheated oven and bake for 45-50 minutes, or until the cobbler part of the cake is bubbly and a light golden brown. Remove from oven and allow cake to cool. Serve with ice cream, caramel, and chopped pecans if desired.

Ingredients
 

  • 1 lb. ripe peaches peeled and sliced
  • 12 ounce can evaporated milk
  • 3 eggs
  • 1 cup sugar
  • 1 tablespoon ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 1 box white cake mix
  • 1/2 cup butter melted
  • vanilla ice cream optional
  • caramel optional
  • chopped pecans optional
