I love weekends when my family gathers around cheering on our favorite sports teams! I love healthy competition, but honestly, my favorite part of the day is the game time food. The kids always have a few requests, but I love surprising them with a twist on one of their favorites. Because I want to cheer on the team as well, the last place I want to be stuck in is the kitchen.
So today, I’m sharing a new family, game day favorite – Stuffed Taco Bread – made with ground beef, cheese, Hunt’s diced tomatoes, Rosarita Whole Black Beans and fresh toppings like shredded lettuce, onion, and guacamole. Picking up these game-time must-haves at Walmart was a breeze. Their bakery bread is fantastic.
Since I like to keep things simple, I’m sharing my favorite, easiest way to make guacamole too. I discovered using a pastry blender gives the guacamole the perfect texture, creamy and smooth, yet leaving a few little chunks, giving it a restaurant flare. I used this kitchen hack this Christmas Eve, and my family loved it. My sister Tami, even went out and bought a pastry blender specifically for guacamole after trying it.

How do you make Stuffed Taco Bread
Prepare “Kitchen Hack: Easy Guacamole” recipe, if you are using.
Remove avocados from shell, and remove seed.
Place in bowl and using a pastry blender, chop the avocados, about 30 seconds.
Season guacamole with a pinch of onion powder, garlic powder, salt and squeeze of fresh lime juice. Add 1-2 tablespoon of chopped green onions and mix together once again, using the pastry blender, approximately 30 seconds to a minute, until you get the texture you desire. Set aside.
Preheat oven to 350 degrees.
In a medium skillet cook ground beef, until thoroughly cooked.
Drain grease and add to a medium mixing bowl.
Rinse black beans and add into the mixing bowl with the beef.
Drain diced tomatoes and add into the mixing bowl. Add 1 ½ cups of shredded cheese and stir until combined. Stir in taco seasoning until coated.
Cut and remove the center of the loaf of bread. Place loaf of bread on a baking sheet and add beef into the holed center. Top with cheese and cover with foil, place in the oven and bake 25-30 minutes. Remove foil and reduce heat to low broil, broil for 2-5 minutes until cheese is melted and bubbly.
Remove from oven and slice. Then top with the toppings of your choice. Serve immediately

- cilantro roughly chopped

- sour cream
- guacamole
Easy Guacamole
- 1-2 avocados
