This tomato basil soup it reminds me of my childhood because I pretty much grew up on grilled cheese and tomato soup. It wasn’t until I made homemade tomato soup that I fell in love with this traditional combination. I thought tomato soup was okay, but I never thought it was amazingly delicious.

I learned that my mom hated tomato soup when I made this recipe for my family and my parents. I served her a bowl of this deliciousness and was so excited for her to try it. When she told me she hated tomato soup, I almost gasped. I was like, but we ate it all the time, and then she told me how it went, and, well, basically, my memory was flawed.

My mom said that it was my dad who loves tomato soup and only made it for him, that she never actually had the soup. What?!

While my mom hated tomato soup, she tried mine. I think because she felt bad and guess what, friends? She loved it!

Our entire family loves this soup, and it is a massive win over here to please seven people. Only one other soup comes in with those same reviews: my Sicilian Chicken Soup.

And let’s be honest, dinner ready in 20 minutes makes this recipe stand out. But the best part of the soup is the sautéed garlic and shallots combined with broken-up whole tomatoes, giving this soup a rustic feel and robust flavor.

tomato Basil Soup Recipe Tips

  • Storing: Store tomato soup in an airtight container in the refrigerator for up to 3-4 days, or freeze it for longer-term storage, ensuring it’s completely cooled before freezing.
  • Fresh Basil: For the best flavor, use fresh basil leaves rather than dried basil, and add them near the end of cooking to preserve their aromatic qualities.
  • Blending: Use an immersion blender or carefully transfer the soup in batches to a regular blender for a smooth and creamy consistency.
  • Cream Options: Adjust the creaminess to your preference by adding heavy cream, half-and-half, or a dairy-free alternative like coconut milk; remember to do this after blending to avoid curdling.
  • So whether it is cold outside or you are just looking for a quick and easy meal, try this Tomato Basil Soup. Simple meals like this Tomato Basil Soup are a lifesaver during busy weeknights.

What is the difference between tomato soup and tomato basil soup?

Tomato basil soup is similar to tomato soup but a bit thicker and more basil-y. Both are incredibly delicious and great with grilled cheese.

Now, tomato soup is less thick than tomato bisque. Tomato bisque uses more whipping cream and chicken or vegetable broth; tomato soup is made with only tomatoes and chicken or vegetable stock.
