Preheat the oven to 350°F and line a baking sheet with parchment paper.

In a large mixing bowl or stand mixer, combine the butter, brown sugar, and sugar until smooth. Add egg and vanilla and mix well to combine.

In a separate mixing bowl, combine the flour, cocoa powder, salt, baking soda, and baking powder. Slowly add the dry ingredients to the wet ingredients and mix until a firm dough forms. Stir in the milk and mix until combined.

Use a small cookie scoop to scoop into balls on the prepared sheet pan. 15 cookie dough balls should fit on each pan.

Bake the cookies for 10 to 12 minutes. Immediately upon removing them from the oven, press the centers down using a round teaspoon to make the “thumbprint”.

Allow cookies to completely cool while you make the frosting.

For the frosting, place the evaporated milk, sugar, egg yolks, butter, and vanilla in a pot and warm them on the stovetop over medium heat.

Stir the mixture so it’s well combined. Continue stirring until it’s thickened, approximately 11 to 12 minutes. I set my time for 11 minutes and 30 seconds, this seems to work every time.

Once thickened remove from heat and add coconut and pecans. Beat it with a mixer until the frosting is thick enough to spread.

Place a teaspoon of frosting in the well of each cookie.

Once all of the cookies are frosted, you can serve them as is or drizzle them with chocolate.

Melt chocolate in microwave following directions. Drizzle it over the top of the frosting. Allow the chocolate to harden and cool before serving

Storage Tips

Allow the German chocolate thumbprint cookies to fully set before you store them. Keep them in an airtight container. For best results, stack them with wax paper between the layers to keep them from sticking.

They will keep well for two to three days at room temperature.
