My kids were beyond excited when we made them for the first time. And this recipe is a keeper, especially for the holidays. I can see these being a hit Christmas morning. And I am sure I will have several little elves willing to help me.

And while I wait for the holidays, fall is here and it is my favorite time of year. Jeans, sweatshirts, and sneakers, call it good. Then you have pumpkin spice everything. From hot chocolate to bread, cookies, and now these little donut bites!

While traditional donuts take some time to prepare, these Pumpkin Spice Bites take very little effort on your part. The hardest thing about them is waiting for the 3-4 hours for them to rise.

So warm up the oven and get out the sugar, it is time for the Pumpkin Spice Bites. Trust me, the kids will gladly assist.

How do you make Pumpkin Spice Bites?

Place 12 frozen rolls on a prepared pan lined with parchment paper. Cover with a clean & dry kitchen towel. Rise at room temp for 3 hours.

Cut rolls in half and place flat side down on baking sheet.

In a large mixing bowl make the sugar and spice mix by adding 1 cup of sugar, 2 teaspoons of pumpkin spice and 2 teaspoons of cinnamon. Stir until combined, and set aside.

In a large pot, add 1 inch of canola oil, it took me 3 cups. Heat over medium-high heat until oil is hot. I check this by adding a drip of water and if it sizzles, the oil is ready. Turn heat down to medium-low.

Add 3 of the rolls into the pot, fry for 12-15 seconds or until light golden brown, then turn. Repeat and fry for 10-15 seconds, once all sides are a light golden bowl, remove from pot and place in the sugar & pumpkin spice mix.

Coat the rolls with the sugar and place on a serving tray. Repeat with the remaining rolls and sugar. Serve, devour, and enjoy!
