This Colorado Breakfast Hash is a delicious and simple breakfast! It’s super quick and makes an awesome addition to the table!

This Breakfast Hash was inspired by my family’s love for going out to eat, especially to breakfast. As much as they love going out for cheap pancakes, skillets, and crispy hash browns, I equally loathe it. Every time we go out for breakfast, I get super irritated at the amount we have to pay for a family of seven to eat breakfast. All because I know I could’ve made the entire meal for 1/3 of the price and twice the flavor.

That is what makes this Breakfast Hash so amazing, is the flavor.

Not only is the Breakfast Hash incredibly flavorful but it is also inexpensive to make.

I love this recipe because it reminds me of my favorite hash brown breakfast casserole. This breakfast has kept all the classic breakfast tastes but adds the bold flavors of the chiles with the Colorado Chile Sauce.

You can make breakfast hash with your favorite twist like adding in your favorite hash brown breakfast casserole favorites, other vegetables or proteins, you can easily make this your own.

The first time I made this, was actually for dinner so it works well for any time of the day.

The loved using Alexia Crispy Rosemary Fries with Sea Salt, but you could really use any sort of frozen fries. These are just my preference because they are crispy russet potatoes that are cut with the skins on. Then seasoned with a generous helping of rosemary and sea salt giving you the ultimate combination of all-natural crunch and flavor. The potatoes perfectly complement the peppers and onion.

However, what’s really unique about this hash is the addition of the Colorado Chile Sauce. It’s what really ties everything together with a kick. Easy to make, taking just 30 minutes to cook breakfast (or even dinner) this Colorado Breakfast Hash will make your family and friends smile.

How do you make breakfast hash?

Make Colorado Chile sauce.

Preheat oven to 425 degrees.

Prepare hash by adding Alexia fries to a large cooking/baking sheet.

Top with diced red and green bell peppers and onion.

Place in oven and bake for 25 minutes.

Remove pan from oven and change oven setting to low broil.

Top potatoes with eggs, I prepared our eggs as sunny side up, my kids prefer scrambled.

Then top eggs with cheese, place back in oven under low broil and cook until cheese has melted.

Remove pan from oven and top with green onions, cilantro and Colorado Chile Sauce.

Serve immediately and devour!

Ingredients
 

  • 1 package Alexia Crispy Rosemary Fries with Sea Salt
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 1/2 red onion diced
  • 6 eggs prepared to taste
  • 2 cups cheddar cheese shredded
  • 1 recipe Colorado Chile Sauce
  • 3 green onions chopped
  • 1/3 cup cilantro chopped

Colorado Chile Sauce

  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 8 dried chiles
  • 1 1/2 teaspoons oregano
  • 1/3 cup diced green chiles
  • 1 teaspoon cumin
  • 1/2 teasoon coriander
  • 2 garlic cloves
  • 1 1/2 teaspoons salt

Instructions
 

  • Make Colorado Chile Sauce.
    Follow directions here.
