My husband’s absolute favorite thing about barbecues is the food. Literally, when I tell him someone invited us over, he will ask “what are they serving?” I am not kidding. Pretty much he is happy with anything on the grill including his favorite appetizer bacon-wrapped, cream cheese stuffed jalapeño poppers. My dad made these years ago and my husband has been devouring them ever since.

And while I love jalapeño poppers as well, they are somewhat time-consuming to make. So the other day when I had a craving for those little bites of delicious cheese and bacon heaven. I decided to make it into a dip. I roasted the peppers, cooked up some chopped bacon in a pan, then threw it all together in a skillet with some cheese. Genius.
