This delicious Easy Raspberry Cream Cheese Danish is filled with fresh raspberries and cream cheese and topped with a classic almond glaze.

Easy Raspberry Cream Cheese Danish
My husband makes fun of me all the time for my snobbiness in my taste or rather critique of hotels I agree to stay in. He planned a trip for us last summer to Vegas, super proud of the “deals” he found. However, he noticed my face upon entering the room and when I set my luggage on the highest counter in the room, afraid of letting it touch the ground. I was not happy. He explained to me, however, that this room also included free breakfast – a perk he couldn’t pass up, especially because he knew there’d be Danishes included in the buffet.

This made staying there a little more bearable, and watching his joy eating 8 Danishes made me finally relax (as well as knowing after breakfast we were switching hotels to his other “great” deal). After seeing his love of Danishes and accepting my own sugar addiction, I set out to create an easy twist on a classic pastry.

Check out just how easy these are, step one.

The cream cheese and almond glaze perfectly complements the tartness of the raspberries, which hold their own. And Rhode’s Rolls are the perfect base, allowing the ingredients to shine. The hardest part of this recipe is waiting for the dough to rise and resisting the urge to burn the roof of your mouth eating them hot out of the oven.

Bet you can’t eat just one! Enjoy! XOXO San

How do you make Easy Raspberry Cream Cheese Danish?

To prepare the dough, spray a 15×10 cooking pan with cooking oil, place 15 Rhodes rolls on the pan, 3 rows with 5 rolls in each row. Set a towel over the rolls and allow the rolls to rise. Set aside for 2-2 ½ hours.

Once rolls have risen, use a pair of scissors and cut into the roll, like pictured. Use your fingers to spread out the dough to make a pocket, like pictured below.

In the pocket add a generous tablespoon of cream cheese to the pocket. Top with 3-4 raspberries, like pictured. Repeat with remaining rolls.

Once all of the rolls are filled, pinch the sides to seal and close up the roll, as there may be some separation from cutting the rolls originally.

Preheat the oven to 350 degrees. In a small bowl mix together brown sugar, 1 tablespoon of white sugar and 1/2 teaspoon of cinnamon. Sprinkle the mixture evenly over the rolls. Place in the oven and bake for 25 minutes.

Remove rolls from oven and immediately brush with melted butter and sprinkle with remaining sugar and cinnamon.

Make glaze by mixing all of the ingredients together until smooth. Drizzle glaze over danishes, then serve.
