We love gumbo. CORRECTION…my husband and I love gumbo.
The kids not so much.
I thought this Slow Cooker Chicken and Sausage Gumbo would be a perfect match for both my husband and I, and our kids.
Well, it wasn’t.
It still had celery and tomatoes, two vegetables that are licensed to make my 3 younger children cry!
In fact, I can hear them crying now as I write this.
I wasn’t much of a gumbo fan, until I made my Slow Cooker Sausage and Shrimp Gumbo. It is so delicious and even easier to make!

Not only do I love how convenient slow cooker cooking is. I love, love the way it makes my house smell.
The aroma is really perfect for any day, rain or shine, wind or snow, it is nice to walk into your house when it is filled with the smell of a good meal. It brings comfort.
While I do love a good shrimp gumbo, I made this because I was craving rice, and gumbo is just perfect to top it with. While I didn’t have any shrimp, I just adapted my recipe with chicken, some more tomatoes, broth and celery and viola, this delicious Slow Cooker Chicken and Sausage Gumbo was made. Well, delicious if you ask me and Jake, well and Aiden and Jojo too. Madden, Jersey and Cannon they would rather starve than eat anything that has touched cooked celery. While the kids cry over this now, I know in a few years this is something we will all enjoy. Until then, my husband and I get to enjoy leftovers and we don’t mind that one bit.
This Slow Cooker Chicken and Sausage Gumbo is an easy twist of the Southern dish. Consisting of green pepper, onion, celery, chicken stock, chicken and smoked sausage. Easy and delicious recipe.
- 2 (14½ ounce) cans diced tomatoes
- 1 can chicken broth
- 1 pound Smoked sausage, cut into ½ pieces
- 1 pound boneless-skinless chicken thighs, or breast
- 1 medium onion, diced
- 1 green bell pepper, diced
- 3 celery ribs, chopped
- 1 heaping tablespoon oregano
- 1 heaping tablespoon dried thyme
- ⅛ teaspoon ground red pepper, optional
- Red pepper flakes, optional
Combine tomatoes with juice and broth in slow cooker. Add sausage, chicken, onion, bell pepper, celery, oregano, thyme, and red pepper. Stir well. Cover; cook on low for 4-6 hours.
Serve gumbo over rice.
Want to add some heat to this Slow Cooker Chicken and Sausage Gumbo recipe, add some red pepper flakes or ground red pepper, it will turn up the heat.
My husband loves heat, so he would love this prepared with chicken that was seared with cayenne pepper, something we will be trying in the near future, since our kids don’t care for it much anyway. I will just need a glass of milk near by!
