Maple Cinnamon Sweet Potato Bars

One of my favorite fall treats is these pumpkin bars with cream cheese frosting. Literally I could have them every day and be in heaven. So this year, I decided to take one of my favorite fall treats and add a spin with my favorite fall vegetable, sweet potatoes.

How do you make Maple Cinnamon Sweet Potato Bars?

Sweet Potato Bars
  • Preheat oven to 350 degrees.
  • Mix eggs, oil, sugar, and mashed sweet potatoes in a large bowl. Sift remaining ingredients and add to the sweet potato mixture. Mix well and pour into greased jelly roll pan,

  • Bake for 18-20 minutes. Remove from oven and allow to cool before you frost them.

  • Note: You may use a 9×13 pan and bake for 25-30 minutes, insert toothpick to make sure it is done.
Maple Cinnamon Cream Cheese Frosting
  • In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time, add maple syrup, extract and cinnamon and beat until smooth and creamy.
  • Spread frosting on cooled bars, then slice and serve!

Ingredients
 

Sweet Potato Bars

  • 4 eggs
  • 1 cup canola oil
  • 2 cups sugar
  • 1 3/4 cup cooked & mashed sweet potatoes equal to about 2 sweet potatoes
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg

Maple Cinnamon Cream Cheese Frosting

  • 1/2 cup unsalted butter softened
  • 8 ounces cream cheese softened
  • 4 cups powdered sugar
  • 1 teaspoon maple extract
  • 4 tablespoons pure maple syrup
  • 1 teaspoon cinnamon

Kids review: I didn’t tell anyone that it was made from sweet potatoes and they loved them. Even the hubby! Their favorite part though hands down was the maple cinnamon frosting, it will be going on our pancakes soon!

    1. I hope you enjoy them! The flecks in the photos should just be the ground cinnamon that is added but you can definitely add vanilla bean if you’d like!
