These tasty Reese’s Peanut Butter Cup & Chocolate Monster Cookies are made with rolled oats, peanut butter, chocolate, and Reese’s Peanut Butter Cups.

These chocolate cookies are what happens when you take a classic monster cookie recipe and load it up with peanut butter cups and chocolate! These peanut butter cup cookies are rich, decadent, and the best chocolate peanut butter cookies ever.

There’s no shortage of monster cookies at our house and one of my favorite things to do is come up with new versions. So, say hello to peanut butter cup chocolate monster cookies. They might just be our new favorite!

The inspiration for this recipe came from a few things. First, my family LOVES no-bake cookies. There’s something about the chewy oatmeal with the rich chocolate that makes us all swoon.

Second, our love of monster cookies will never wane so I thought why not make a chocolate monster cookie with oatmeal and peanut butter and load them up with peanut butter cups?

My goal was to make a baked chocolate oatmeal cookie with a similar texture and flavor of no-bake ones but studded with lots of PB cups just like a monster cookie. The verdict? A-MA-zing!

My entire family loves these peanut butter chocolate monster cookies, even our peanut butter hater, Jersey. Aiden even told me, “Mom this is like the best cookie ever. It tastes like a no-bake cookie and my favorite candy bar at the same time.”

This soft, chewy cookie with chunks of one America’s favorite candies, Reese’s Peanut Butter Cups, makes it an instant favorite. There wasn’t one person who tried these that didn’t ooh and aah over them.

Ingredients

  • Large eggs
  • Packed brown sugar
  • Granulated sugar
  • Vanilla extract
  • Honey
  • Baking soda
  • Softened butter
  • Cocoa powder
  • Peanut butter
  • Rolled oats
  • Reese’s Mini peanut butter cups sliced in half
  • Semi-sweet chocolate chips

How do you make Reese’s Peanut Butter Cup & Chocolate Monster Cookies?

Preheat oven to 350°F (175 °C). Line a baking sheet with parchment paper.

In a large bowl with an electric mixer, beat the eggs.

Add the remaining ingredients in order, mixing well after each addition. Add the Reeses Minis and chocolate chips last and stir on low until just combined.

Use a cookie dough scoop to place on the baking sheet, leaving 2″ in between each.

Bake for 12 to 15 minutes, I like them at 12 minutes and 30 seconds. Let cool for 5 minutes before moving to a cooling rack. Enjoy!

COOKIE BAKING TIPS

Can you freeze these cookies?

All cookies can be frozen, but it is best to wrap them individually to freeze them and only do this once they have cooled completely.

Another way to freeze then is to stack them in layers in a Ziplock or container, separating the layers using parchment paper. I personally love individually wrapping them as I feel they taste better.

How long will cookies stay fresh in an airtight container?

Properly stored, freshly baked cookies will last for about 2 to 3 weeks at normal room temperature and stored in an airtight container.

Can you freeze the dough?

This cookie dough can be easily frozen but it is best if you portion about the dough beforehand. Scoop the cookie-like you were going to bake them and just place on parchment paper. Then wrap the parchment paper in plastic wrap or store in an airtight container.

Before you bake preheat the oven, following the cookie recipe suggested temperature. Stick on baking sheet lined with parchment paper, placing 2 inches apart, the only thing you will need to change is adding an extra 1-2 minutes to the baking time for the frozen dough.
