Peanut Butter & White Chocolate Brownie Cheesecake Bars

I must admit, I recently have developed a new addiction to cheesecake.
And this new addiction is not helping with my “getting ready for swimsuit season”.

On top of the creamy rich taste of cheesecake that I just have fallen in love with, no bake cheesecake recipes fit my busy schedule.
With five kids, baseball practice, dance, school runs, preschool drop-offs and pick-ups, soccer and all the other “errands” throughout the day.
I love any recipe that I can just whip up and store in the fridge, making it simple, easy and delicious.
Bonus everyone loves it.

I get a little tired of the “cookie” like crust and thought it would be fun to pair my favorite no bake cheesecake with my brownie recipe instead…and this combo is killer good.

An added perk of no bake cheesecake, there is an easy calorie saver. Simply substitute with fat-free cream cheese and Cool Whip, you will still have the fantastic flavor and save a few calories.
(And making me feel a little less guilty.)

Peanut Butter & White Chocolate Brownie Cheesecake Bars

Peanut Butter & White Chocolate Brownie Cheesecake Bars - simple, easy and delicious. This no bake cheesecake recipe on top of a rich brownie make for the perfect combo, creamy and smooth, while not overly sweet. Fun to serve at a barbecue, party or as a sweet ending.

Ingredients

  • Brownies:
  • ½ cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • Peanut Butter Cheesecake:
  • 1 – 8 ounce cream cheese
  • 2 tablespoons + 1 teaspoon white granulated sugar
  • 1 cup Cool Whip, about ½ container
  • 2-4 tablespoons peanut butter, to taste, try cheesecake after you have added 2T, add more if desired
  • White Chocolate Cheesecake:
  • 1 – 8 ounce cream cheese
  • 2 tablespoons + 1 teaspoon white granulated sugar
  • 1 cup Cool Whip, about ½ container
  • 4 tablespoons white chocolate chips

Directions

Brownies:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.

In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.

Bake in preheated oven for 25 to 30 minutes. Do not overcook.

Cool on a wire rack.

Once cooled, start to make cheesecakes.

Peanut Butter Cheesecake:

In a medium mixing bowl whip together cream cheese and sugar until smooth and creamy. Add in peanut butter until fully combined. Stir in Cool Whip until it is well blended and there are no chunks of Cool Whip. Spoon this over brownie and spread out evenly. Place in the refrigerator while you prepare the white chocolate cheesecake.

White Chocolate Cheesecake:

In a small bowl melt white chocolate chips in the microwave in 30 second intervals, it should only take 1 or 2. Set aside.

In a medium mixing bowl whip together cream cheese and sugar until smooth and creamy. Add in melted white chocolate until fully combined. Stir in Cool Whip until it is well blended and there are no chunks of Cool Whip. Spoon this over peanut butter cheesecake and spread out evenly using a spatula or knife. Place in the refrigerator to chill for 1-2 hours.

Notes

Total time, includes 2 hours to chill the cheesecake bars.

Kids review: They loved it! Jersey who swears to hate peanut butter even liked it. Madden was the only one who removed the cheesecake and only ate the brownie, he wouldn’t even try the topping. My husband Jake, quickly moved in and ate the topping, he didn’t want it to got to waste. (smile)
