I love spring.
One of my favorite things about the spring and summer months is that the local farmers market is open!
I love going down there every Saturday morning, picking out fresh produce, eating a pastry from a local bakery and just meandering around by myself to all the booths. Did you notice a few key words there? By myself.
My favorite stand in all of the market, besides Cave Girl Eats and Treats (my sister-in-laws Paleo bakery) is a peach stand, this farmer travels from Palisade, CO about 4 hours away to bring the best, most juiciest peaches around. YUM!
So inspired from the opening of the farmer’s market last weekend here is my favorite sweet roll recipe – Fresh Peach & White Chocolate Sweet Rolls.
Made with fresh peaches and white chocolate, these sweet rolls offer a refreshing twist to your Grandma's rolls. Soft and layered with white chocolate cream cheese filling, fresh peaches, cinnamon and sugar this will please anyone with a sweet tooth or not.
- 4 tablespoon butter, melted
- 4 tablespoon water
- 1/4 cup instant vanilla pudding
- 1 cup milk
- 1 egg, beaten
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 cups flour, bread flour is preferred
- 2 1/2 teaspoon active dry yeast
- ¾ cup white chocolate chips
- 2 ounces cream cheese
- 3 large fresh peaches
- 2 tablespoons butter
- 2 tablespoons brown sugar
- ¼ cup white sugar
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- 2 cups powder sugar
- 4 tablespoons butter, semi melted
- 4 tablespoons hot water
- ½-1 teaspoon almond extract
Place ingredients as listed above in order into a bread machine. Set for dough cycle. After complete on dough cycle, remove from machine and roll out to a rectangle about 17x10 inches.
Cut peaches in half, remove seed and slice in 1/8 inch slices. In a medium pan, melt butter, add peaches and brown sugar cook for 3-5 minutes until tender. Do not overcook. Remove from heat and set aside.
Melt white chocolate in the microwave for 1 minute, remove and stir until completely melted. Add cream cheese and stir until smooth, if your chocolate starts to harden reheat in the microwave with the cream cheese for 20-30 seconds. Whip until smooth. Spread in a thin layer and evenly on the dough.
Add peach slices on top of cream cheese white chocolate mixture. Don’t over lap and spread out over the entire dough, don’t worry not all of the dough will be covered. That’s okay, it will turn out just fine.
Roll the dough tightly from long end, pinching edges closed when completely rolled. Slice dough into 12 rolls, about ¾-1 inch thick slices. Place into greased 9×13, let rise until doubled.
Bake at 350 degrees for 20-22 minutes.
Add glaze on once they have cooled for a few minutes. Serve immediately or cover and set aside for later. I would add the glaze right before serving.
Mix butter, powdered sugar, and almond extract. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Drizzle over sweet rolls.
