Okay, I know this is getting a little ridiculous with all the cheesecake being made around my home.
I really can’t help myself. It is EASY, creamy, and delicious; I can make it with fat-free ingredients and it will still taste amazing!
I was grocery shopping last week and there was a sale on Oreos, I literally walked by them 3 times before I caved.
I wanted the double-stuffed ones but they were already gone! AGH! So I went for the mint.
Kids were excited, but I told them I was going to surprise them with a treat to celebrate Jersey, my 5 year old daughter graduating preschool. So here is what we made. And it became an instant favorite.
Now trending at our home as the most requested snack and dessert.
Rich, smooth and creamy no bake cheesecake with dark chocolate and mint. Quick and easy to serve for any occasion.
- Mint Oreo Crust
- 1 package Mint Oreos
- ½ cup unsalted butter, at room temperature
- ¼ cup sugar (optional)
- Chocolate Mint Cheesecake
- 2 – 8 ounce cream cheese
- ¼ cup white granulated sugar
- 1 container Cool Whip
- 8 ounces Ghirardelli 60% cocoa chocolate chips
- 1 ½ teaspoons peppermint extract
Mint Oreo Crust
In a food processor add the entire package of Oreos and process until cookies resemble coarse crumbs. Pour crumbs into medium mixing bowl, add butter and mix together until it starts to stick together. Press into the bottom of pie pan. Set in the fridge until ready to use.
If you are making individual servings, like I did pictured. I just crumbled the Oreos using my food processor, then add 3 tablespoons of the crumbs at the bottom of each up, I completely eliminated the butter and sugar. This works out nice, less calories and sugar too!
Chocolate Mint Cheesecake
In a small mixing bowl or large glass measuring cup, melt chocolate in microwave for 1 minute, stir until completely melted, you may need to stick it back in the microwave for another 30 seconds. Set aside and cool to room temp, or cool to the touch.
Beat cream cheese, sugar, chocolate, and peppermint extract in large bowl until smooth. Now stir in cream cheese until they are well combined; spread over prepared crust. Chill until filling is slightly firm. I like it between 30 minutes to an hour.
Prep time includes 30 minutes to chill. You can make 10 individual servings or make this into a pie.
Kids Review – Top 5 most requested dessert ever…so I would say it is a winner.
