These Mini Fruit Pizzas are a simple, soft sugar cookie adorned with a light cream cheese frosting and seasonal fresh fruit.

I love hosting showers, parties and having friends over to my house. I also love giving treats to teachers, friends, family, and neighbors. Especially love on these occasions when they can be simple, yet elegant. These cookies are one of those desserts that perfectly fit every occasion. Breakfast, lunch, afternoon snack or dinner – this will complete any meal with a dash of sweetness.

An added bonus, these are my husband’s favorite cookies, wait maybe they moved to 2nd place after my German Chocolate Cake Cookie? Either way, he will eat the entire 2 dozen if I let him.
What I love about this little bite of heaven is that you can mix up the fruits that you use, to fit what is in season. The presentation every time is flawless, and your guests, teachers or whomever you serve this too will just love it.

How do you make Mini Fruit Pizzas?

Sugar Cookies
  • Preheat oven to 350 degrees F (180 degrees C). Lightly grease 2 cookie sheets.
  • Cream together sugar and butter. Beat in egg yolks and almond or vanilla extract.

  • Add flour, baking soda, and cream of tartar. Stir. (Note: dough will be firm, not like your normal cookie dough. Don’t worry it is supposed to be this way.)

  • Form dough into walnut size balls and place 2 inches apart on cookie sheet. Don’t flatten. Bake 10 to 11 minutes, until tops are cracked and just turning color. Let them cool.

Frosting
  • In a large bowl cream together cream cheese and butter, stir in the sugar, powdered sugar and flavoring until smooth. Set aside, in the fridge if necessary until ready to frost.

  • Once cookies are cooled, frost with a large heaping tablespoon of cream cheese frosting. Top with fruit.
  • Serve and enjoy.

Ingredients
 

Sugar Cookies

  • 1 1/4 cups white sugar
  • 1 cup butter
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar

Frosting

  • 8 ounces cream cheese softened
  • 2 tablespoons butter softened
  • 1/2 cup sugar
  • 1/4-1/2 cup powdered sugar
  • 1/2 to 1 teaspoon almond or clear vanilla flavoring

Fruit

  • 12 large strawberries sliced
  • 24 blueberries
  • 6 kiwis diced in large chunks

  4. Hi Sandra! I’m stopping over from Let’s Get Real today. These cookies are so beautiful. They really show off the natural beauty of the fruit and I’m sure the cookies are perfection. My favorite treats add fruit in some way. I bet my daughter will want these for her birthday treats at school. That’s coming up next month so I better make sure to try them soon.
