“The Panchito” Virgin Pina Colada with Caramel Swirl

Last weekend we returned from a week long vacation that included a 5-day Disney cruise to the Bahamas. We sailed on the newly remodeled Magic, and was literally MAGICAL, by far the most amazing vacation! It feels like a dream, and I have to keep reminding myself that we were just there. There are so many amazing things about this trip, too many to share in this post alone, so today I will just focus on one thing, the most amazing drink I’ve ever had! Ever!
I think I gained most of my weight on the ship through the variety of virgin cocktails rather than the food.
My favorite was “The Panchito”. It was served on our 2nd night in the Cubanesque Cabana’s Restaurant. I wish we would have rotated through that restaurant earlier. You combine fresh pineapple, coconut milk and caramel – need I say more? Here’s to Mickey Mouse, beaches, and delicious tropical calories!

“The Panchito” Virgin Pina Colada with Caramel Swirl

“The Panchito” Virgin Pina Colada with Caramel Swirl

A great island refresher for anywhere and anytime of the year. A virgin pina colada made with fresh pineapple, coconut milk and extract, brown sugar, ice and a caramel swirl.


  • 1 can unsweetened coconut milk
  • 20 ounces of pineapple juice
  • 1 – 1 ½ cups fresh pineapple, cubed
  • 5 cups crushed ice
  • 1 teaspoon coconut extract
  • 2 tablespoons brown sugar
  • 8 tablespoons caramel sauce


Add the pineapple juice, coconut milk, fresh pineapple, coconut extract, brown sugar and crushed ice to a blender; blend at high speed.

Pour into a tall glass, like a collins glass or other cocktail cup. This serves 8 servings, about 8 ounces each. Garnish with caramel sauce by pouring 1 tablespoon of the sauce on top of the pina colada and stir in. Add a pineapple wedge and serve. Drink up and enjoy!

We celebrated our son Madden’s 7th birthday while on the cruise. He loved it! Everything literally had Mickey on it, even the food.

My daughter Jordan, 8 years jumping for joy! She belongs somewhere warm!

Jersey, 5 years literally followed the characters around. She was the only one who wanted to get everyone’s autograph. She loved all of the characters, I loved watching her face and smile grow every time!

Aiden, 10 years in the kids club on the cruise. He loved it!!! This was one of the most amazing features.

Cannon, 3 years like his sister Jersey loved all of the characters, especially Mickey Mouse!

We were blessed to have the grandparents come along!! My mom enjoyed the mocktails as much as I did!

We feel so blessed to go on such an amazing vacation! We will be going back and will be Disney’s biggest advertisement! And not a paid one, this literally is a vacation for everyone! %http://www.adashofsanity.com/wp-content/uploads/2014/03/family-boat.jpg
