This is by far the most amazing Italian tomato sauce you will ever have…ever!
In fact while I was making this my husband commented that I needed to say this a few times in my post because it is hard to show by a picture how good something is, sometimes you just need to try it.
If I could give you a sample through the screen I would but literally you have to trust me on this one IT IS THE BEST SAUCE you will ever have.
What’s great about this sauce is you can put it on pasta, pizza or serve it with toasted bread and cheese and you will love it each and every way.
I was given this recipe by my sister-in-law Deanna. Her mom, Roz was at a local Italian restaurant and they served this sauce, she loved it do much that she had to make her own. So she evaluated the ingredients, wrote them down and now we have the recipe!
The fact that Roz could try something, and make the recipe didn’t surprise at all as she is an amazing cook. Everything she makes is mouthwatering and delicious! I raved about her food so much the first time I visited her that my husband couldn’t wait to try some of her recipes, she came out this past Thanksgiving and made a salmon dish that literally won him over.
Roz is one of the most beautiful women I have ever met, she has strong Italian features olive skin, salt and pepper hair, gorgeous figure, strong accent (she grew up in the Bronx) and piercing eyes. She is real, down to earth, yet you can tell she is from the coast wearing high heels while she was cleaning outside on my brother’s farm. She is dedicated to her children & husband; nothing comes before family. This is evident from her many trips out here to Colorado to see her daughter, Deanna and her first granddaughter, Eleanor.
Usually good recipes come from people who are who are filled with love and passion for life. And if there was one word I could use to describe Roz it would be passionate. So today I share the most amazing sauce you will ever have, from one of the most beautiful women I have met.
A classic Italian Margherita Sauce made with fresh tomatoes, basil, garlic, flat leaf parsley and olive oil. Simply delicious. Serve on pasta, pizza or as an anti-pasta.
- 10 plum tomatoes
- 1-2 cups olive oil
- 1 cup fresh basil, chopped
- 1/2 cup fresh parsley, chopped
- 1-2 teaspoons salt
- 1 teaspoon pepper
- 3-5 cloves of garlic, diced
Blanch the tomatoes by boiling a large pot of water. Then take one tomato and make an X on it, you can do this on the bottom of the tomato but I like to do it on the side.
Repeat to the rest of the 9 tomatoes. Once the water is boiling add the tomatoes 5 at a time and let them cook for 1-2 minutes. Repeat with the remaining tomatoes. Remove from water, let them cool. Once cooled peel and dice, then place in a large mixing bowl.
Add the rest of the ingredients and let it sit at room temp for 3-4 hours, if it sits longer that is okay. Once served, store in the refrigerator if you have left overs.
The cook time is the time you let the sauce rest on the counter.
Kids review: They loved this sauce, but I have a few that will pick out the fresh basil and not because they don’t like – they haven’t even tried it. But it’s green and a veggie so they automatically think it is gross.
