Red Velvet Biscotti

Valentine’s Day seems to be on everyone’s mind, well except maybe my husband, who scheduled a boy scout camp out for that very weekend, actually that very night (sigh). But for everyone else, this special day of love is right around the corner. Although I am not ready to hit the store and write 125 valentines for my kids, I am ready to make some of my favorite Valentine’s Day treats. Red Velvet combines two essential components to make a perfect Valentine’s Day treat chocolate and red.

This year, when thinking about what kind of special treats my kids can take to their teachers, I thought Red Velvet Biscotti would be a nice change, something a little different and the perfect complement to go with their morning cup of Joe. So here is my recipe for Red Velvet Biscotti. I hope you enjoy it or your kids’ teachers enjoy it as much as I do.

What is biscotti?

Biscotti are Italian almond biscuits that originated in the Italian city of Prato. Traditionally, they are baked twice and in an oblong shape, resulting in a dry, crunchy cookie usually dipped in a drink like coffee or tea.

Biscotti is classified as a cookie, and even though I am typically not a fan of crisp, crunchy cookies, these are amazing. So, I guess maybe I do love crunchy cookies because I love biscotti.

  • To maintain the freshness of your Red Velvet Biscotti, store them in a cool, dry place within an airtight container. This will ensure their deliciousness for up to one week.
  • Slice your biscotti to your desired size. Keep the dough thickness consistent to avoid adjusting the baking time.
  • Before baking, I shape my biscotti dough into rectangles that are approximately half an inch thick.
  • When flavoring your Red Velvet Biscotti, the possibilities are endless! You can add in chopped nuts or dried fruits for an extra burst of flavor and texture.
  • A fun idea is to package these delicious treats in pretty bags or boxes and give them as gifts to friends and family.

Red Velvet Biscotti

Red Velvet Biscotti is a twice baked, chocolatey, red velvet treat. This makes for a perfect pairing with your favorite coffee, tea, or steamed milk.

Ingredients
 

  • 3 cups all-purpose flour
  • 1/4 cup butter softened to room temperature
  • 1 cups sugar
  • 1/2 cup unsweetened cocoa
  • 1 tablespoon red food coloring
  • 2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 3 large eggs whisked
  • 1 teaspoons vanilla
  • 1 cup white chocolate candy melts melted for dipping

Instructions
 

  • Preheat oven to 350°F
  • Combine sugar and butter in an electric mixer, cream until smooth. Stir in vanilla, food coloring, and eggs. Set aside
  • In a medium bowl combine flour, cocoa, baking soda, and salt stir until completely mixed, about 30 seconds. On low speed, pour in the dry ingredients to the egg mixture until it forms a soft dough.
  • Divide the dough into 2 equal pieces. Roll each piece on a lightly floured surface into 14-inch cylinders about 2-3 inches in diameter and 1/2" thick. Place on prepared baking sheet about 2-4 inches apart
  • Bake at 350 for 25 minutes. Cool for a few minutes and reduce oven temperature to 250 degrees.
  • Slice logs down the long end. Lay flat side on the cookie sheet and bake again for 20 minutes, turning over after 10 minutes. Let them cool completely on the baking sheet over wire racks.
  • Melt white chocolate in a double boiler or in a microwave using a microwaveable bowl. Dip tops or ends of cooled biscotti into melted chocolate and dry on waxed paper. Top with nuts, sprinkles, or colored sugar.

Kids review: They loved this! They like my other biscotti but this by far is their favorite. When they asked to have more I told them we were saving them for their teachers and they were super sad, “Can’t we just make more?” Best kind of reaction to me!

So, if your husband is taking a bunch of kids out …on Valentines day…how many women did your husband just help out?! To me, if my nugget was old enough and in the scouts – girlllll you best believe id be a’ clappin, and a’ shoutin and prayin’ to Jesus for them to go camping Valentines!
