Chocolate and pistachio is a delicious combination, and what better way to enjoy it than in an easy chocolate chip cookie bar? These sweet bars are easier to make than a batch of cookies and even easier to enjoy.

I am on a sweet and salty kick, hence the following recipe.

I was craving pistachios and wondering how I could feed my craving while making the kids a special treat for after school. That’s when this cookie bar recipe hit me.

Adding dark chocolate, my favorite kind of chocolate, and pistachios to a cookie bar seemed like the perfect combination. Top it with a white chocolate caramel drizzle, and you have a bite of heaven on earth.

It’s an easy dessert bar recipe in less than 30 minutes. This not only satisfied my craving, but it also caused me to overindulge… oh so good!

  • Dark brown sugar
  • Softened butter
  • Vanilla
  • Eggs
  • All-purpose flour
  • Baking powder
  • Shelled pistachios
  • Dark chocolate chips
  • Coarse sea salt & Caramel drizzle (optional)

How do you make Dark Chocolate Chip Cookie Bars?

Heat oven to 350°F. Grease bottom and sides of 13×9-inch pan with shortening or cooking spray.

In a large bowl, beat dark brown sugar, butter, vanilla, and eggs with electric mixer on medium speed, or mix with a spoon.

Stir in flour and baking powder until well blended.

Stir in pistachios and 1 cup dark chocolate chips.

Spread the dough into the prepared pan.

Bake 20-25 minutes or until golden brown and center is set. Cool completely, about 1 hour.

Drizzle with melted chips and caramel sauce. Let stand until set. For bars, cut into 6 rows by 6 rows.

The first time I made these, I was a little worried when the kids walked in the door to get their after-school treat, they would be gravely disappointed, mainly because their cookie bars had nuts!

Oh, was I wrong! And honestly, I should have known better; they all love pistachios! Each of them got one then went outside to play. Within minutes, they all came in for seconds.

Instead of seconds, though, they got to take a nice walk delivering these chocolate chip cookie bars to some of our favorite neighbors. Hey, you gotta share the love, right?!

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
