Over time, I have become known as the “coffee cake lady” to those around me. It’s a title I don’t mind because it is accurate. I enjoy coming up with new coffee cake recipes for breakfast, brunch, or whenever someone needs cheering up. This particular recipe is very festive and perfect for the holidays because of the cranberries.

What Is Coffee Cake?

A coffee cake is a sweet, buttery cake with cinnamon and fruit running throughout it. It’s topped with a crumbly streusel topping and often served with coffee.

Contrary to popular belief, coffee cake does not have coffee in it. It gets its name from being a cake that pairs well with coffee.

Ingredients for Cranberry Orange Coffee Cake

This cake is the perfect addition to any holiday breakfast or dinner! It makes for a wonderful gift to take someone for the holiday season and also works as dessert! Serve it with hot coffee, and you’ll have the ultimate moment. I can’t get enough of this cake!

Cake Ingredients

  • Yellow cake mix 
  • eggs
  • Water
  • Canola or vegetable oil
  • 3.52 ounces JELL-O instant vanilla pudding
  • Orange zest
  • Dried cranberries

Cinnamon Swirl

  • 1 cup brown sugar
  • 1 tablespoon cinnamon

How do you make Cranberry Orange Coffee Cake?

Preheat oven to 350; grease a 9×13 metal pan.

First, beat the cake mix, instant pudding mix, eggs, oil, water, and vanilla extract using a stand or hand mixer for 7 minutes. I love to use my KitchenAid mixer for this!

Meanwhile, mix brown sugar and cinnamon in a bowl.

After the cake mix is done for 7 minutes, stir in the orange zest and 2/3 of the cranberries.

Pour half of it into a greased 9×13 metal pan. Then sprinkle 1/2 of the brown sugar mixture over that cake in the pan.

Use the leftover batter and sprinkle sugar on top. Swirl gently using a back of a cereal spoon.

Preheat oven to 350 degrees. Bake the coffee cake for 20 minutes, then carefully pull the cake out, so you can sprinkle the remaining cranberries on top.

Gently push the cake back in the oven and bake for 15-25 minutes or until it’s set and slightly pulled away from the edges.

Once completely baked all the way through, remove it from the oven and allow it to cool completely.

What to Serve with Cranberry Orange Coffee Cake

You can have this cake by itself or as part of a meal, like breakfast or brunch, and it also works fantastic as an after-dinner dessert.

    1. So what I do, use a yellow cake recipe, I am sure you have one you love make it as normal but add the 1/2 cup of instant Jell-O vanilla pudding and beat for 7 minutes. Then follow the rest of the direction in my recipe. 🙂 Enjoy!
