I love white chocolate, especially with caramel. In fact, my favorite fondue is white chocolate caramel. Yummy! So when I accidentally opened a bag of white chocolate yesterday this idea came to mind. I love my homemade carmelitas and the idea of using white chocolate made me super excited. When I pulled them out of the oven at first I couldn’t wait to cut into them, so not following my own directions I cut into them for my first bite. Today I will report I still have a blister in my mouth, yes, there is a reason you wait for hot caramel to cool. I hope you enjoy these as much as I did.

How do you make White Chocolate Caramel Bars?

  • Preheat oven to 350 degrees.

  • Melt butter, caramels, and cream in a double boiler over medium heat and set aside.

  • Cream butter and brown sugar together using a mixer. Set aside.

  • Stir together flour, oats, salt, and baking soda. Add to butter and sugar mixture and combine well.

  • Press 3/4 of the mixture into the bottom of a 9″x13″ pan. Bake for 10 minutes. Remove from oven and cool for 10 minutes.

  • Pour caramel mixture evenly over crust, sprinkle with chocolate chips. Crumble remaining oatmeal mixture over caramel. Return to oven and bake an additional 15-17 minutes, until the edges are lightly browned. Remove from oven and cool completely before cutting.

9X13 METAL BAKING PAN:  I use metal for this recipe, but you can use glass as well.

MIXING BOWLS: I love having a variety of sizes of mixing bowls. From small to large, I find that having at least 3 bowls of different sizes has been essential in my kitchen. I prefer Pyrex because of the durability.

MEASURING CUPS: Nothing beats a good set of measuring cups that last a long time. I love metal measuring cups because of their durability.

MEASURING SPOONS: I have to have a metal set of measuring spoons on hand. The plastic ones just don’t last long in our house thanks in large part to the garbage disposal.

Ingredients
 

  • 3 tablespoons butter
  • 3 tablespoon cream
  • 32 caramels unwrapped
  • 3/4 cup + 2 tablespoons butter
  • 1 1/4 cup brown sugar
  • 1 1/4 cup rolled oats I like to use 1/3 rolled oats & 2/3 quick oats
  • 1 1/4 cup flour
  • 1 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 11 ounces white chocolate chips

My review: So I was only going to have one…BUT when I cut the bars I could let the outside crust go to waste. I always cut the out ¼ inch to ½ inch off simple for presentation. I ate the entire outer crust.

Kids review: They loved it! I was surprised because they are not big white chocolate fans unless it is with strawberries.
