Our family loves getting Chinese or sushi take-out. If it were up to the kids this would be a biweekly occasion. They LOVE sesame and teriyaki chicken. In fact, there have been numerous times where fights have broken out over the last couple of pieces of chicken. Not one of my kids is a rice eater; they get that from their Dad. They all love the noodles instead, especially my girls.

When I made this “take-out” meal from home it was an instant hit. I say “take-out” because that is what the kids thought it was the first few times we had this meal. There is one important note to make on this recipe: if you are serving small children or someone who is sensitive to heat, put the chili oil on the side and let them add it in. The first time we made this, let me just say, it wasn’t pretty. All of our kids were crying at some point during dinner on how hot it was. The next time, we served the chili oil on the side as Jake and I love a little heat.

The noodle and sauce pair well with teriyaki chicken. I love to marinate the meat all day then grill it while continuously glazing it the entire time it’s on the grill. I would like to say this is my husband’s favorite meal and we both feel the Sweet Ginger Scallion Sauce is the most amazing sauce EVER! From our “take-out” to yours, enjoy!

How do you make Soba Noodles with Sweet Ginger Scallion Sauce?

  • Mix all the ingredients for Sweet Ginger Scallion sauce in a bowl, taste test and adjust seasoning as you’d like. Set aside for 10 -15 minutes for the flavors to develop.

  • Boil the soba noodles as per the instruction on the package, If you need them cold drain well with the cold water once they are cooked or just drain the water in which they boiled if you like them hot.
  • Add the sauce and sesame seeds and toss the noodles well, check for the seasoning one last time. Sprinkle lime juice if you like and also if you like add some julienned cucumber, give a final toss and Enjoy!

Ingredients
 

  • 9 ounces Soba noodles
  • 2 teaspoons lightly toasted sesame seeds
  • julienned cut cucumber optional topping
  • lime wedges optional
  • salt and pepper to taste

Sauce

  • 3/4 cup scallions finely chopped
  • 2 tablespoons fresh ginger minced
  • 1/4 cup fresh cilantro chopped
  • 3 tablespoons sesame oil
  • 2 teaspoons chili oil (will add heat, use less or serve on side for picky eaters)
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons honey
  • salt to taste I don’t add because I think the soy sauce is enough
  • pinch black pepper

  1. I made these almost as follows. The only thing I did not add are the sesame seeds, my husband can’t eat them. I have to say, they were the best noodles I have ever eaten. I thought I made enough to last a week, kids like to snack on leftover Chinese food. But they were gone in two nights. They were that good. I will make again many times.

  2. Last night I stir-fried some cabbage, yellow pepper, carrots, and mushrooms, then tossed them over soba noodles with your sauce, and it was DELICIOUS. Topped it with sesame seeds, green onions, and avocado. It was my boyfriend’s first time having soba and we ate every last bit of it!
